PUMPKIN ROLL 
3 eggs
1 c. granulated sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. sifted all purpose flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
Powdered sugar

Beat eggs until fluffy (about 3 minutes). Gradually add sugar, beat constantly; pumpkin and lemon juice. Add flour, baking powder, cinnamon, ginger, nutmeg and salt. Mix well and turn out on a greased jelly roll pan (15 x 10 x 1) bake 15 minutes at 375 degrees cool 5 minutes. Sprinkle with powdered sugar, turn out on towel while still warm. Roll up towel and let cool.

FILLING:

3 oz. cream cheese
4 tbsp. butter
1 tbsp. mayonnaise
1/2 tsp. vanilla
1 c. powdered sugar
1 c. chopped walnuts

Cream together cream cheese, butter, mayonnaise, vanilla and powdered sugar. Beat until fluffy. Unroll pumpkin roll and spread with filling. Sprinkle with walnuts and reroll (without towel of course). Chill for one or two hours.
