IRISH STEW 
1 lb. beef, cubed
2 lg. onions, sliced
4 carrots, sliced
1 green pepper, sliced
1 can tomatoes, diced
2 tbsp. brown sugar
1/2 c. catsup
3 med. potatoes, cut up
Salt & pepper

Salt and pepper beef cubes. Roll in flour and brown in skillet. Set aside. In low oblong pan, place browned beef. Cover with onion slices, carrot slices, tomatoes, green pepper. Sprinkle with brown sugar and salt and pepper for desired flavoring. Cover and bake at 350 degrees for 1 hour. Add catsup and potatoes. Cook 30 minutes or until done. Cut meat into smaller chunks when adding potatoes. Serves 4.
