IRISH STEW 
3 lb. lamb, cubed
3 slices salt pork or bacon
12 sm. white onions
6 lg. potatoes, diced
1/4 c. chopped parsley
1/2 c. flour
1/2 tsp. thyme leaves
1 tbsp. salt
1/2 tsp. fresh ground black pepper

Put half the meat in stew pot, top with layer of half the salt pork or bacon, onions, potatoes and parsley. Repeat with the rest of the meat and vegetables. Combine flour, thyme, salt and pepper with 4 cups water. Pour over meat and vegetables. Bring to boil, reduce heat, cover and simmer for 1 1/2 hours. Stir well, cover again and cook 30 minutes more. Serves six.
