RHUBARB NUT BREAD 
1 1/2 c. brown sugar
2/3 c. vegetable oil
1 egg
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 c. sour milk or buttermilk
2 3/4 c. flour
1 1/2 c. rhubarb, chopped
1/2 c. chopped nuts
1 1/2 tbsp. melted butter
1/2 c. granulated sugar

In a large mixing bowl, beat together sugar, oil and egg. Mix in baking soda, salt, vanilla and milk. Add flour, rhubarb and chopped nuts. Mix. Pour into 2 large or four small greased and floured loaf pans. Pour melted butter over each loaf and sprinkle with granulated sugar. Bake at 325 degrees for about 45 minutes to one hour, or until cake tester comes out clean. Remove from pans and cool. Yield: two large or four small loaves.
