LIMA BEANS DE LUX 
2 c. cooked or canned green lima beans
1/2 c. pimentos, minced
1/2 tsp. salt
2 tbsp. butter, melted
1/2 c. bread crumbs
1 c. grated cheese
2 tbsp. catsup
1 3/4 c. white sauce

Mix lima beans, pimentos, salt, cheese, catsup and white sauce together. Pour into a greased baking dish. Mix crumbs and butter together and spread on top. Bake in a moderate oven, 350 degrees for 30 minutes.

WHITE SAUCE:

1 c. milk
2 tbsp. flour
1 1/2 tbsp. fat
1/2 tsp. salt

Melt the fat in a frying pan on top part of a double boiler. Remove from heat and stir flour into make a smooth paste. Add 1/3 of the hot milk and stir until mixture is smooth; add the remainder of the liquid and salt. Cook until smooth and thick. The process takes about 10 to 15 minutes over direct heat.
