MEXICAN HOMINY 
10 slices bacon
2 lg. onions
1 green pepper
1 (No. 2) can tomatoes (2 1/2 c.)
1 tbsp. flour
1 clove garlic or 1/4 tsp. garlic puree
1 tbsp. chili powder, salt, sugar and red pepper
2 (No. 2) cans hominy
1 lb. aged yellow Cheddar cheese

Fry bacon crisp, remove bacon from skillet and add sliced onions and chopped green pepper to hot bacon grease. Cook 20 minutes. Add tomatoes, flour mixture with a little water and all of the seasonings. Cover and cook slowly one to two hours. Add hominy and let simmer 10 minutes or longer. Just before serving add the grated cheese and crisp bacon broken up. Serves 12.
