MEXICAN CHICKEN 
4 - 6 chicken breasts, removed skin and bones
16 oz. can Mexican stewed tomatoes
Velveeta cheese

Pour tomatoes over chicken. Bake at 325 degrees for 1 hour (cover for 30 minutes of cooking time). Remove from oven, sprinkle with Velveeta cheese cubes and put back in oven until cheese melts. Serve over rice. Note: Mexican Velveeta and other spices may be used in seasoning to taste.
