PATTY JEFFERS' WHITE CHOCOLATE
CAKE
 
1/4 lb. white chocolate (melted over hot water)
1 c. butter
4 eggs
2 1/2 c. cake flour
1 c. buttermilk
1 c. chopped pecans
2 c. sugar
1 tsp. vanilla
1 tsp. baking powder (sifted with flour)
1 c. coconut

Mix above and bake at 350 degrees for 30-45 minutes in a tube pan.

ICING:

2 c. white sugar
1 sm. can evaporated milk
2 sticks butter
1 tsp. vanilla

Mix all together and let stand 1 hour. Stir occasionally, then cook until soft ball. Beat until consistency to spread. (Half of icing may be enough.)
