APPLE FRUIT GELATIN SQUARES 
No - stick cooking spray
3 env. unflavored gelatin
1 1/2 c. cold water
6 oz. can frozen apple juice concentrate, thawed
1 c. assorted fruit (green and red grapes, strawberry halves, banana slices and - or mandarin orange segments)

Spray 8 inch square pan with cooking spray (Two non - metal ice cube trays can also be used. Spray ice cube trays with no - stick cooking spray. Continue as directed, placing fruit in each square.) In medium sauce pan, sprinkle gelatin over water; allow to soften 1 to 2 minutes. Cook over medium heat until gelatin dissolves, stirring constantly. Stir in apple juice concentrate; blend well. Pour into coated pan. Arrange fruit in gelatin. Refrigerate 1 hour or until firm. Cut into squares or desired shapes with cookie cutters. Makes 24 squares.
