SAUSAGE AND POTATO CASSEROLE 
4 c. potatoes, or 2 lb.
2 lb. sweet Italian sausage links
8 oz. tomato sauce
Small onion, oregano, salt and white pepper

Using vegetable oil, coat a shallow casserole dish. Peel fresh potatoes, chunking them. Sprinkle with oregano, salt, and pepper, sliced onion. Toss together. Bake at 350 degrees for 20 minutes. Add tomato sauce to top continue baking for another 40 minutes.
