ITALIAN CHICKEN CASSEROLE 
2 lbs. chicken pieces, skin removed
8 white potatoes, peeled and cut into lg. chunks (roaster style)
2 celery ribs, sliced
1 lg. onion, sliced
2 carrots, peeled and sliced
1 tbsp. parsley, chopped
Salt, pepper, and garlic powder to taste
1 (#202) can stewed tomatoes
1/4 lb. butter (optional)

Season chicken pieces with salt, pepper, and garlic powder to taste. Place vegetables in covered roaster or casserole. Season lightly with salt, pepper, garlic powder, and parsley; mix well. Top with chicken pieces. Crush stewed tomatoes and pour over casserole. Cut butter into pats and place on chicken pieces. Cover and bake at 350 degrees for 1 hour and 15 minutes.
