QUEEN FRUIT SALAD | |
2 1/2 c. (1 lb. 4 1/2 oz. can) crushed pineapple, drained 1 c. shredded coconut 1 c. cottage cheese 1 c. dairy sour cream 4 med. size unpeeled fresh peaches, sliced or diced 8 whole unpeeled peaches Lettuce Mix pineapple, coconut, cottage cheese and sour cream. Chill. When ready to serve, fold in peaches. Slice a thin piece of bottom of each whole peach to make it flat to stand on plate. Cutting only to about 1/2" from bottom, cut peach into quarters. Gently separate and remove pit. Place on lettuce. Fill with cottage cheese mixture. Makes 8 servings. |
