2 c. flour 2 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 2 tbsp. butter, soft 1 beaten egg Buttermilk Sift dry ingredients. Add sugar. Rub in butter. Add egg and milk to form medium soft dough. Roll out to 1 inch thick on floured board. Make 2 round cakes with "X" on top, or cut into rounds with cookie cutter. Flour top and bake in hot oven, about 425 degrees for approximately 10 minutes or until nicely browned. Served hot with butter and jam or cold. Whipped cream may be used with jam. |
