CHICKEN A L'ORANGE 
1/2 c. flour
1/2 tsp. salt
Dash of pepper
1 broiler-fryer chicken, cut into 8 pieces
1 tbsp. salad oil
1 c. orange juice
2 tbsp. brown sugar
2 tsp. soy sauce
1/2 tsp. ground ginger

Preheat oven to 350 degrees. Combine flour, salt and pepper in plastic or paper bag. Add chicken pieces and shake to coat. In Dutch oven heat oil over medium heat. Brown chicken on all sides, a few pieces at a time. Discard drippings. Meanwhile, combine juice, sugar, soy sauce and ginger; pour over chicken. Cover tightly and bake 35 to 40 minutes until fork tender. 4 servings, about 385 calories each.
