1 med. onion, diced 1 sm. green pepper, diced 3 tbsp. butter 1 1/4 c. uncooked long grain rice 2 cans beef consomme Cashews Saute onion, green pepper, and butter until onion is transparent. Add rice and stir to coat with butter. Stir in consomme. Cover and lower temperature; simmer for 25 minutes or until liquid is absorbed. Add cashews just before serving. |
