3 to 4 c. cooked beef steaks, cut into thick julienne
strips
2/3 c. diced sweet peppers, half green and half red
1/3 c. chopped purple onion
1 scallion, thinly sliced
1/3 c. chopped parsley
Grated rind of 1 orange for garnish
Head of lettuce
2/3 c. garlic dressing

Mix all ingredients together and serve at room temperature. Serves four.
