BEET JELLY 
Scrub and cut tops off of 5-6 pounds red beets. Slice thin and boil until the beets are light in color.

6 c. beet juice
1/2 c. lemon juice
2 boxes Sure Jell

Bring to a boil. Boil until spoon shows a coating, stirring continuously.

1 lg. box of Jello (raspberry, strawberry, cherry, or grape flavored)
8 c. sugar

Bring to a boil again for 6 minutes and stir constantly. Skim foam off. Pour into hot jars and seal with hot wax.
