NAPOLI CASSEROLE 
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/2 tsp. salt
1 c. shredded Mozzarella cheese
1/2 lb. Italian sausage
1 c. zucchini slices (may add more to taste)
1/4 c. onion, chopped
2 c. noodles, cooked & drained well
1/2 c. tomatoes, fresh or canned

Make a white sauce with flour, butter, milk and salt. Add 1/2 cup cheese. Stir well until melted. Remove sausage from casing and cut into pieces and brown in skillet. Add zucchini and onions; cook until tender. Stir in sauce, noodles and tomatoes. Pour into casserole top with remaining cheese. Bake at 350 degrees, about 20 minutes until bubbly. Uncover the last 5 minutes of baking if too juicy.
