HOT ZUCCHINI SPREAD 
6 sm. to med. zucchini, ends removed, washed, dried, shredded
1 c. Swiss cheese, shredded
4 oz. cream cheese, softened
3/4 c. Parmesan cheese, divided
2 tbsp. sour cream
1 tbsp. mayonnaise or salad dressing
1/2 tsp. Mrs. Dash table blend or to taste

Preheat oven to 350 degrees. Place zucchini in a microwave-safe colander and place colander over a microwave-safe dish. Microwave on High (100 percent power) for 4 minutes. Stir, then microwave another 4 minutes to allow some of the excess liquid to escape. Allow to cool and squeeze with hands, or press with wooden spoon against side of colander to remove as much liquid as possible. Set aside.

In a large bowl, mix together Swiss cheese, cream cheese, 1/2 cup Parmesan cheese, sour cream, mayonnaise or salad dressing, and Mrs. Dash seasoning. Stir in zucchini until incorporated. Pour mixture into a 1 1/2 to 2 quart casserole or baking dish and top with remaining 1/4 cup of Parmesan cheese. Bake uncovered 30 to 40 minutes or until warm and bubbly. Serve with pita chips. Makes 4 to 5 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
