FRESH TAHITI LIME PIE (Blender
Method)
 
1 pt. cottage cheese
1 env. gelatin (unflavored)
1 lg. Tahiti lime
1 c. sugar
1/2 c. hot water
2 c. coconut
2 tbsp. butter

Cut lime into eighths after removing about 3/4 of its peel. Remove seeds and blender chop until lime is finely cut. Mix in gelatin and allow to sit for a few minutes. Add hot water and blender mix until gelatin dissolves.

Add cottage cheese and sugar slowly. Mix in blender until smooth and creamy. Refrigerate until cool. Melt butter and mix with coconut. Pat firmly as crust in 9 inch pie pan. Pour in lime mixture, chill until firm.
