SHRIMP ROCKERFELLOW 
1 lb. boiled shrimp
1 pkg. frozen chopped spinach
2 tbsp. butter
1 sm. onion
4 tbsp. sour cream
Cream sauce with wine
Shredded American cheese
Four sm. casseroles or 4 ramekin shells

Melt butter, add chopped onions and saute until wilted, add spinach and cook for 1/2 hour or until desired doneness.

Layer in dish or divide into 4 shells: 1st - spinach; 2nd - boiled shrimp; 3rd - sour cream; 4th - cream sauce.

CREAM SAUCE:

1 1/2 tbsp. flour
1/2 stick butter
1 1/2 c. milk
5 tbsp. white wine

Melt butter, add flour and mix well, add milk. Cook until bubbly. When done, add wine, salt and pepper to taste.
