SHRIMP SAUTE | |
Fresh spinach (cooked) 2 oz. Feta cheese 1 red tomato (chopped) 1 red onion (chopped) Juice from 1 lemon 1 lb. shrimp (cleaned and boiled) butter 1 c. white wine or vermouth 1. In a large heavy saucepan, melt the butter over low heat. Add tomato and onion. Cook, uncovered, until softened. 2. Boil spinach, drain and add to the tomato and onion. Add lemon juice. 3. Add boiled shrimp, white wine and saute about 15 minutes. 4. Add Feta cheese, saute until melts, about 1 minute. 5. Serve hot, over a bed of rice. (Serves 2-4 depending.) |
