CORN FRITTERS 
2 eggs
1/4 c. milk
1/4 c. water
1 tbsp. butter, melted
16 oz. whole kernel corn, fresh or canned, drained
2 c. all purpose flour
2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. freshly ground pepper
1 tbsp. sugar

In a bowl, beat the eggs until light. Add the milk, water and butter and blend. Stir in the corn. Add the flour, baking powder, salt, pepper and sugar and stir just until moistened.

Heat 2" of vegetable oil in a deep fat fryer or electric skillet to 350 degrees. Drop tablespoonfuls into the hot oil and fry 2 to 3 minutes on each side or until golden brown. Drain on paper towels. Sprinkle with powdered sugar. Serve with maple syrup.
