HUFFIN' PUFFIN' MUFFINS | |
1/2 c. butter, softened 1/2 c. firmly packed brown sugar 1 1/2 c. mashed bananas (3 med.) 1/4 c. milk 1 tsp. vanilla 2 eggs 1 1/2 c. flour 1/2 c. unprocessed bran or wheat germ 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt Heat oven to 375 degrees. Grease 8 (6 ounce) custard cups or 18 muffin cups. In large bowl, beat butter and brown sugar until fluffy. Add bananas, milk, vanilla, and eggs; blend well. Lightly spoon flour into measuring cups; level off. Stir in flour, bran, baking powder, baking soda, and salt just until dry ingredients are moistened. Fill muffin cups 2/3 full. Bake at 375 degrees for 20-25 minutes or until toothpick comes clean. Cool 5 minutes; remove from tins. |
