SWEET HOT RELISH 
1 lb. jalapeno peppers
15 green tomatoes
2 cucumbers
3 carrots
6 onions
1 c. brown sugar
1 c. white sugar
1 tsp. cinnamon
1/4 c. pickling spices
1 tsp. pepper
1 qt. vinegar

Put all vegetables through food processor. Place in 5 quart Dutch oven. Add all other ingredients. Bring to a boil; boil gently for 30 minutes. Pack in jars and process in boiling water for 10 minutes. Makes 5 pints.

I haven't tried this recipe yet I have a question does it matter what vinrgar you use in this recipe white or cider I have tried a recipe that didn't specify and I used cider and it was very tangy please help if you can.

Hi Rosie,

It doesn't really matter which kind of vinegar you choose; it's really up to your taste. If you prefer less sharpness or bite to your vinegar, be sure to choose a high quality (never a store or no-name unbranded) aged, organic vinegar. Taste the vinegar before using it, because adding it to a recipe is not going to change it and what you add is what you'll get.

You can also use any combination of cider, apple or white vinegar that you like. The only requirement, for safe preserving is that the vinegar you choose have a 5% acidity.
