MICROWAVE RISOTTO 
1/4 to 1/2 c. oil and/or butter
1/2 c. chopped onion
1 c. Italian rice
3 1/2 c. chicken broth and/or white wine
1/2 to 1 c. Parmesan cheese

Heat oil 2 minutes in deep microwave dish; stir in onion. Cook 4 minutes. Stir in rice; cook 4 minutes. Stir in chicken broth; cook 9 minutes. Cook after stirring 9 minutes more. Let stand 5 minutes. If rice is not completely absorbed, cook 5 minutes more. Add cheese.

May also add saffron, baby peas, cooked shrimp or salmon, red or green peppers, mushrooms, bacon or ham.

Since microwave ovens vary in power, you may need to adjust your cooking time.
