MICROWAVE RISOTTO | |
1/4 to 1/2 c. oil and/or butter 1/2 c. chopped onion 1 c. Italian rice 3 1/2 c. chicken broth and/or white wine 1/2 to 1 c. Parmesan cheese Heat oil 2 minutes in deep microwave dish; stir in onion. Cook 4 minutes. Stir in rice; cook 4 minutes. Stir in chicken broth; cook 9 minutes. Cook after stirring 9 minutes more. Let stand 5 minutes. If rice is not completely absorbed, cook 5 minutes more. Add cheese. May also add saffron, baby peas, cooked shrimp or salmon, red or green peppers, mushrooms, bacon or ham. |
