BOILED LOBSTER | |
Live lobsters (allow 1 lb. in shell per person) Water Salt (2 tbsp. per qt. of water) Fill large pot with enough water to cover lobster(s). Add salt and bring to rapid boil. Grasp lobster firmly behind claws and plunge head first into boiling water. Allow water to boil again after putting in each lobster. Lower heat, cover pot and simmer 15 minutes for 1 pound lobster(s); 20 minutes for 1 1/2 to 2 pound lobster(s); 40 minutes for very large lobster(s). Remove from pot, split lobster(s) and serve hot with melted butter. |
