PARMESAN YOGURT CHICKEN | |
3 lbs. fryer chicken, cut up 2 tsp. lemon juice Salt and pepper 1/2 c. plain yogurt 1/4 c. mayonnaise 1 tbsp. Dijon mustard 1 tbsp. Worcestershire sauce 1/2 tsp. ground thyme 1/4 c. thinly sliced green onions 1/2 c. grated Parmesan cheese Arrange chicken, skin side up in a single layer in a rimmed baking pan or broiler pan. Drizzle with lemon juice then lightly salt and pepper. Thoroughly blend remaining ingredients except cheese. Spread mixture over chicken and bake in 350 degree oven for 50 minutes or until tender. Remove from oven and drain off pan juices. Sprinkle with cheese and broil about 4 inches from heat until cheese melts and chicken browns, about 3 minutes. Remaining pan drippings can be mixed with previously removed juices. Former alone has great bite. |
