BAKED GERMAN POTATO SALAD | |
3/4 c. diced bacon (6 to 8 strips) 1 c. onion, chopped 1 c. celery, chopped 3 tbsp. flour 1 1/3 c. water 2/3 c. cider vinegar 2/3 c. sugar (use little less) 3 tsp. salt 1/2 tsp. pepper 8 med. potatoes, sliced & cooked Cook bacon, drain. Return 1/4 cup bacon fat to skillet and add celery and onion. Cook 1 minute. Blend in flour; stir in water and vinegar. Cook stirring constantly until thick and bubbly. Stir in sugar, salt and pepper. Pour over potatoes and bacon in greased 3 quart casserole. Mix lightly. Cover and bake at 350 degrees for 30 minutes. Makes 10 to 12 servings. |
