OATMEAL CRACKLES 
1 1/2 c. brown sugar
1 c. salad oil
1 tbsp. vanilla
2 lg. eggs
2 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
3 c. quick cooking oatmeal

Beat brown sugar, salad oil, vanilla and eggs together until smooth. Mix together flour, baking soda and salt and stir into creamed mixture until blended. Stir in oatmeal. Place 1/4 cup sugar in small bowl. Roll teaspoonful of dough into balls; roll balls in sugar and place on greased cookie sheets. Bake about 10 minutes or until golden brown. Store cookies in tightly covered container.

Yield: about 4 1/2 dozen.

I've also added chopped nuts, chocolate or butterscotch chips, to the dough.
