BAKED STUFFED ZUCCHINI 
Preheat oven to 350 degrees. Wash and trim ends of about 2 pounds zucchini. Parboil zucchini for 15 minutes. Drain and cut lengthwise in halves. Scoop out pulp with teaspoon. Arrange shells in greased 13"x9" pan. Mix scooped out pulp with Pepperidge Farms stuffing mix (or your own) and fill zucchini shells with mixture. Top with Velveeta cheese and bake at 350 degrees for 25 to 30 minutes. Serves 6 to 8.
