OATMEAL RAISIN COOKIES 
1 1/4 c. butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. all purpose flour
1 tsp. baking soda
3 c. Quaker Oats
1 c. raisins
1 tsp. salt (opt.)
1 tsp. cinnamon (opt.)
1/4 tsp. nutmeg (opt.)

Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices. Mix well. Stir in oats. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 11 minutes for crisp cookies in 375 degree oven. Cool 1 minute before removing from cookie sheet. Store tightly covered. Yield: approximately 4 1/2 dozen.
