ZUCCHINI AND HAMBURGER ITALIANO 
4 c. thinly sliced zucchini
12 oz. ground beef (turkey)
1/2 c. chopped onion
1/8 tsp. garlic powder
1 c. cooked rice
1/2 c. tomato sauce
1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1 beaten egg
1/2 c. cottage cheese
1/2 c. shredded mozzarella cheese

In saucepan, cook zucchini, uncovered, in boiling salted water for 1-2 minutes; drain well. In skillet, cook ground beef, onion and garlic until browned and tender. Drain off excess fat. Stir in rice, tomato sauce, 1/2 teaspoon salt, oregano and pepper.

Combine egg and cottage cheese. Arrange half the zucchini slices in a greased 9 x 12 inch glass dish. Add 1/2 meat mixture and then cottage cheese. Repeat. Add mozzarella cheese. Cover and microwave for 10-15 minutes on high or bake in a 350 degree oven for 25-30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
