POTATO TUNA 
4 lg. hot baked potatoes
2 green onions with tops, minced
1 tsp. salt
1 med. tomatoe, diced
2 tbsp. Parmesan cheese
1/2 c. hot milk
1 egg
2 tbsp. butter
Dash of cayenne pepper
1 (7 1/2 oz.) can tuna, drained

Cut a thin slice from flat side of baked potatoes. Scoop out center into a bowl. Add hot milk and whip until fluffy. Add onions, egg, butter, salt and cayenne pepper, mixing well. Add tomato and tuna. Put mixture into potato shells, piling high. Sprinkle with cheese. Bake in 400 degree oven for 10 minutes.
