FRIED PINEAPPLE WITH BANANAS 
1 pineapple, cored, peeled, sliced
2-3 bananas, peeled, halved
1/4 c. coconut, shredded
1 tbsp. cornstarch
1 tbsp. water
1/4 c. vegetable oil
2 tbsp. sugar

Heat oil in large frying pan. Slice pineapple into 1/2-inch slices and brown in oil. When browned, place on dessert plates. Brown banana halves in same pan and arrange on top of pineapple slices.

Mix the cornstarch and water together. Add the coconut to the pan of hot oil and brown for about 1 minute. Then add the cornstarch and water mixture to the pan, stirring well, until it thickens. Add the sugar and mix well. Ladle this coconut sauce over the pineapple and bananas on each plate. Serve warm. Serves: 4-6. (Prep and Cooking Time: 5-8 minutes)
