ORANGE TAPIOCA SALAD 
Frozen orange juice
2 pkg. orange tapioca pudding
1 pkg. lemon or vanilla tapioca pudding
4 1/2 c. liquid
2 cans mandarin oranges, drained
1 can crushed pineapple (save juice)
1 1/4 c. whipped cream

Cook pudding in juice from drained fruit with enough water added to make the 4 1/2 cups liquid. Cool. Add fruit and whipped cream. This can be made the day before. Serves 15-20.

Use frozen orange juice to make the orange tapioca pudding. I add about 1 cup of it to the 4 1/2 cup liquid.
