TURKEY MINESTRONE SOUP 
2 tbsp. canola oil
1 onion, chopped
1 lb. ground turkey
1 clove garlic
4 plum tomatoes, chopped
4 cups chopped veggies (carrots, cabbage, broccoli, green bell pepper, really anything)
4 cups chicken broth (I use low sodium Swanson brand)
Italian seasoning
crushed red pepper
seasoned salt

In a skillet, heat oil and sauté onions, garlic and brown turkey. In dutch oven or soup pot, warm chicken broth, add tomatoes and vegetables. Add meat onion garlic mixture. Season to taste. Bring to a boil, then reduce to simmer.
