ZUCCHINI BREAD 
2 eggs
1 c. sugar
1 3/4 c. flour
1/8 tsp. baking powder
1/2 tsp. cinnamon
1/2 c. raisins
1/2 c. salad oil
1/2 tsp. vanilla
3/4 tsp. baking soda
3/4 tsp. salt
1 c. grated raw zucchini
1/2 c. walnuts, chopped

Beat eggs until light, add sugar gradually and heat thoroughly, beat in oil. Sift dry ingredients together and add to egg mixture alternately with zucchini. Fold in nuts and raisins. Bake at 350 degrees for about 55 minutes. Loaf pan 9 x 5 x 2 1/2 inches. Can be frozen.
