HUEVOS RANCHEROS 
Whole wheat tortillas
16 oz. can refried beans
Salsa
6 green onions, chopped
1 sm. can sliced olives
8 eggs
8 oz. Cheddar or Monterey Jack cheese

Scramble eggs loosely. Add Tabasco sauce to taste. Also add cilantro, garlic, pepper, and curry as desired.

Line a casserole dish with the tortillas, put warmed beans on top of tortillas. Layer eggs evenly over beans. Sprinkle with green onions. Cover with salsa. Place thin strips of cheese over the salsa and garnish with olives. Place in 350 degrees for about 30 minutes or until cheese is heated and entire casserole is warmed.
