SCRAMBLED EGG WHITES, ONIONS AND
TOMATOES RANCHERO
 
1 tbsp. butter
1/2 med. onion, cut in bite size pieces
1 green onion, chopped
2 med. tomatoes, cut in bite size pieces
6 egg whites
2 tbsp. evaporated skim milk
1/2 tsp. chili powder

Use large non-stick frying pan. Saute onion in water until golden brown. Stir in green onion and tomatoes and cook until moisture is absorbed, stirring occasionally.

Whisk egg whites, milk and chili powder until frothy. Stir egg white mixture into sauteed vegetables in frying pan, scrambled until desired consistency. Serves 2.
