HAWAIIN MUFFINS 
14 oz. pkg. orange muffin mix
1/2 c. flaked coconut
8 3/4 oz. can crushed pineapple
1 egg beaten
2/3 c. milk
3 oz. pkg. cream cheese

Combine muffin mix and coconut. Drain crushed pineapple reserving 1 tablespoon of syrup. Add pineapple, beaten egg, and 2/3 cup milk to dry ingredients. Blend only until dry ingredients are moistened. Fill greased muffin pans 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Beat cream cheese until fluffy. Add the 1 tablespoon of pineapple syrup, beat well and serve with hot muffins.

Makes 12 to 16.
