“BLUEBERRY LOAF CAKE” IS IN:

BLUEBERRY LOAF CAKE 
1/4 cup (1/2 stick) butter
1 cup sugar
1 egg, separated
1 cup milk
1/2 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1 pint blueberries

Beat the butter and sugar until creamy. Add the beaten egg yolk. Add the milk, alternately with the sifted flour and baking powder. Stir in the vanilla, then the blueberries.

Last of all, gently fold in the whites beaten to a stiff froth.

Bake in a greased and floured loaf pan in a preheated 375°F oven until cake tests done.

Remove cake from pan by running a knife along edges. Spread a little butter over the top of the cake while it is still warm, and sprinkle with granulated sugar.

I was out of butter and used olive oil, it was still really good. A little spongy but I'm just happy when my food turns out edible, pretty comes and goes.

Lovely texture, light and fluffy and very tasty. I made muffins instead of the loaf, cant find that darned loaf pan lol. I only baked them in a silicon muffin tin for 20 to 25 mins.

This recipe is fantastic! I've made this with strawberries instead of blueberries as well, and it was really good. I also made these into mini loaves for my children's school lunches. Best blueberry cake recipe I've ever made!
