SKILLET ZUCCHINI 
1 lb. hamburger
2 tbsp. butter
4 c. cubed zucchini
1/2 c. chopped onion
1 green pepper, diced
1/2 to 1 lb. whole fresh mushrooms
2 lg. tomatoes, chopped, peeled
Salt, pepper and oregano
2 slices day old bread
1/2 c. grated Velveeta cheese

Melt butter in a large skillet, add hamburger, zucchini, onion, green pepper, mushrooms, and tomatoes. Sprinkle with salt, pepper and oregano. Saute mixture, stirring occasionally on medium to low heat until zucchini is crisp and tender.

Meanwhile, put bread in blender and whirl for bread crumbs. Stir bread crumbs into zucchini mixture, then add Velveeta until melted. Makes 4-6 servings.
