MOM'S MANICOTTI 
14 noodles
1 lb. ground beef
1/2 c. chopped onion
4 c. tomato juice
1 can tomato paste
2 c. shredded Mozzarella cheese
16 oz. small curd cottage cheese
1/2 c. Parmesan cheese
2 eggs
1 tsp. Italian seasoning
1 tsp. basil
2 tsp. sugar
1 tsp. salt
1/8 tsp. pepper

Brown meat and onion, pour off fat. Stir in 2 cups tomato juice, paste, seasonings, sugar and simmer 1/2 hour. Combine Mozzarella cheese, cottage cheese, eggs and Parmesans mix well. Stuff uncooked shell with cheese mix. Arrange in dishes spoon sauce over shells. Pour 2 cups tomatoes juice over all cover with foil. Leave on.

Refrigerate overnight. Take out of refrigerator 2 hours before heating. Bake 1 hour at 350 degrees. Let stand 15 minutes before serving.

Put cookie sheet under dish if mixture did not sit overnight.
