GOAT CHEESE FLATBREAD PIZZA 
1 piece of flatbread (look for in the fresh bread/deli section of your supermarket; I prefer tandoori naan garlic)
2-3 oz. of your favorite tomato sauce (homemade is always best)
1-2 oz. grated or sliced mozzarella cheese (to your liking)
2 oz. crumbled goat cheese
1/2 oz. chopped onion
1 tsp. chopped garlic (or,if you prefer, 1/2 tsp. garlic powder)
1 tsp. chopped fresh or 1/2 tsp. dried basil
1 tbsp. olive oil
1 small diced jalapeno (optional)

In toaster oven crisp flatbread in slow (250°F) oven for about 25 minutes, or until rock-hard (this is necessary so your pizza retains some crispness when done; keep oven at 250°F).

Once your flatbread is prepared spoon on tomato sauce and spread evenly. Next, add Mozzarella and then goat cheeses, also spreading evenly. Now add onions, garlic, basil and jalapeno (if applicable).

Finally, drip olive oil atop your pizza and return to oven, heating at 250°F for approximately 12 to 15 minutes, or until cheese is nicely melted and enjoy!

Serves 1-2, depending on your appetite!
