HOT CHOCOLATE 
3 oz. unsweetened chocolate
1/2 c. cold water
3/4 c. sugar
1/8 tsp. salt
1 tsp. vanilla
1 c. heavy cream
Hot milk

Combine chocolate and water in a saucepan over low heat. Stir until chocolate is melted. Add sugar and salt, stirring until mixture is smooth. Bring to a boil, stirring constantly, and cook 5 minutes.

Remove from heat and add vanilla. Cool completely. At serving time whip heavy cream and fold into chocolate mixture. Ladle about 3-4 tablespoons of sauce into each cup and fill with hot milk. Makes 6-8 servings.

NOTE: This recipe makes a perfect chocolate dessert sauce all by itself. Just leave out the hot milk and spoon over ice cream.
