BEEF WITH PEA PODS 
1 lb. beef steak
4 tbsp. soy sauce
1 tbsp. cornstarch
1 tbsp. dry sherry
1 tsp. sugar
4 tbsp. cooking oil
1/2 tsp. salt
1/4 lb. pea pods (or spinach)

Cut beef across grain 1/4 x 2 inches. Mix beef with soy sauce, cornstarch, sherry and sugar. Remove stems, strings from pea pods. Rinse pea pods and dry pat with a towel.

Put 2 tablespoons oil in hot skillet over high flame. Add salt, then pods, stirring until pods turn darker green (1 minute). Remove pods.

In skillet add other 2 tablespoons oil. Stir in beef and turn until beef is almost cooked (2 minutes). Add pea pods and mix thoroughly. Keep crisp and serve. Add mushrooms, if desired. Substitute green beans, peppers, broccoli, spinach for pods.
