BEEF CHOW MEIN 
3/4 lb. ground beef
4 tsp. fat
4 tbsp. onions, chopped fine
1 1/3 c. celery, thinly sliced
1 1/3 c. Chinese vegetables
2 c. hot water
1 tsp. salt
4 tsp. cornstarch
1 c. cold water
4 tbsp. soy sauce
2 c. cooked rice

Brown meat; drain off fat. Measure fat into pan; brown onion. Add celery, Chinese vegetables, hot water, salt, and soy sauce; simmer 15- 20 minutes.

Combine cornstarch with cold water; add to mixture. Cook until thickened, stirring continuously. Serve 3/4 cup over 1/2 cup rice per serving. Yield: 4 servings.

1 serving: 2 meat, medium fat exchanges; 2 bread-starch exchanges; 1 fruit exchange.
