YIA YIA'S CARROT CAKE | |
3 c. flour 2 c. sugar 5 eggs 2 c. zucchini, shredded 2 c. carrots, shredded 2 tsp. cinnamon 1 tsp. vanilla 2 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 1/2 c. pecans or walnuts, chopped 1 1/2 c. oil Mix eggs and sugar until fluffy. Add oil, vanilla, baking powder, soda, cinnamon, salt, flour, carrots and zucchini. Stir in walnuts or pecans. Grease 2 large loaf pans, 9 1/4" x 5 1/4" x 2 3/4". Bake at 350 degrees for about 1 hour. |
