MUNCHING PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Stir together sugar and syrup in a 1 1/2 quart casserole. Place in microwave oven and cook 4 minutes on high. Stir well and add peanuts. Cook an additional 3 minutes.

Add butter and vanilla to syrup, blending well. Return to oven and cook 1 minute more. Peanuts will be lightly browned and syrup very hot.

Add baking soda and gently stir until light and foamy.

Pour mixture into lightly greased cookie sheet. Let cool 1/2 to 1 hour. When cool, break into small pieces and store in air tight container. Makes about 1 pound.

NOTE: Raw peanuts may be used, but must be combined with sugar, syrup and 1/8 teaspoon salt at beginning of recipe. Total cooking time remains the same and mixture must be stirred after first 4 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
